Lemony white bean toast

A bright little lunch with pantry ingredients and very little ceremony.

What you’ll need

  • 1 can (15 oz) white beans, drained and rinsed
  • 1 tablespoon olive oil, plus a little for serving
  • 1 small garlic clove, finely grated
  • 1 tablespoon lemon juice, plus zest to taste
  • 2 tablespoons water, plus more as needed
  • 4 slices of your favorite bread
  • Salt, black pepper, and chopped parsley to taste

Let’s make it

  1. Warm the olive oil in a small saucepan over medium-low heat. Add the garlic and stir for about 30 seconds, without browning it.
  2. Add the beans and water. Warm for 4–5 minutes, stirring, then mash roughly with a fork. Add a splash of water if the mixture is dry.
  3. Stir in the lemon juice. Taste and season with salt and pepper. Toast the bread.
  4. Spoon the warm beans over the toast. Finish with parsley, a little lemon zest, and a drizzle of olive oil.

A LITTLE EXTRA

Add sliced tomatoes or serve with a simple salad. Adjust the lemon to suit your taste.
